Homemade Hazelnut Mylk...But What About The Leftover Meal??

If you make your own nut mylks like me, you may be left wondering what on earth to do with all the left over meal/pulp, again like me!

As hazelnut and cacao are 2 of my most favourite things I decided to combine them. The result? A yummy dark chocolate, sugar free, raw cookie! I am in Love! And they only take 5 minutes to prep.

Ingredients
1 cup hazelnut meal (dried/dehydrated) or ground hazelnuts
Date paste – dates blended with water (can be substituted for honey or any other liquid sweetener - I've personally not tried other liquid sweeteners but feel free to experiment and find your own flavours / level of sweetness).
3 tbs cacao powder
2 tbs cacao nibs
1 tbs dessicated coconut

Method
Throw all ingredients into a food processor until combined.

Don't over process it - avoid turning it into a paste. It should be soft and workable but not lumpy either.
Shape into balls, and flatten to shape into cookies.

Eat immediately for a squidgy cookie experience, or leave them to rest for a firmer feeling...and enjoy!
